Did some bone in chops last night over mesquite with some asparagus and scalloped potatoes. Pulled the pork at 140* and let rest for a couple minutes.

Been eying the little propane Weber Q for a good camp, race, traveling, etc type grille. Well lowe's had this thing marked down from $200 to $100 and I jumped on it. It's missing the gas knob and igniter button. Just got those for $15 on grillparts.com

I had a full sized Q for the backyard. Had it 9 years, uncovered, abused the shit out of it. Just replaced it this last year. Had I taken care of it, it would have lasted a lot longer.

Got a pork butt rubbed down with Pitfaced Rub from @bvbull200 to go in the WSM early tomorrow morning. I'll re-rub it before it goes on to try and get a nice bark on it. Will throw a couple racks of baby backs too...

Oh yeah...I plan on caking that shit on tomorrow morning before it goes in. I learned on that chuck I smoked last weekend that I need to put a whole lot more than I'm used to.

Looks like nobody answered you. Boneless skinless chicken thighs are pretty cheap. Take to 170 IT otherwise they're kinda gummy at 160. Depending on where you live tri tip roast can be fairly cheap and is great smoked to 120 IT then quick seared on each side over coals.
