    So I just bought this wireless thermometer but the temperature readings between the one drilled in and the wireless are quite drastically off. The one I put in is at about 275 and the new thermometer reads 254. Is the built in one really that off? Or is the new wireless one off?

    The built in one is off I can almost guarantee... those things are beyond worthless. But, calibrate your new digital so you're sure, even if you can't adjust it...

    That's definitely what I would do. You'll find real soon that the built in is schizophrenic as hell.

    The one on the lid of my WSM reads an average of 10° higher than actual.

    The one on my WSM consistently is either higher or lower than actual temp, the amount of which depends on when in the cook cycle you look at it. I've seen it off by 40 degrees an hour after firing it up. It's dead to me.

    It did. It was way over done. It might have been closer to 160 than 150 lol.

    I pull mine at 120, let rest 5 mins while I put the grate directly over hot coals, sear to 130. 5 minute rest after that, then slice. Perfect medium rare to rare every time.
