    No problem! Thanks for the support. I should have it shipped out pretty soon. Since we're nearing the end, I'm going to try and knock out the orders here and there as they come in.

    Small town means you get to get in good with the butcher, yeah? Do they bring in the carcass and cut them all there or do the cuts arrive there mostly portioned out?

    If off the carcass, you ought to talk to them about a future purchase and see how much of the ribs they'll let you take. I've gotten ribs as long as my forearm before with TONS of meat on them. It's a hoot and crazy tasty.

    Looking forward to seeing what you cook with our rub!

    Everything is cut in house. Between the two markets in town, they buy most all the meats from the FFA kids when the auction comes around

    Oh yeah...the spicy version is excellent! I'd say just enough spice to enjoy it without it taking over and you did an excellent job of maintaining the original flavor.

    My wife is much more sensitive to heat than I am. She enjoys both and describes them as follows: "The original is sweet and has a low spice that comes on the back end. The spicy has an initial kick that mellows out and leaves the original flavor to taste. There's a mild lingering of heat after the initial kick."

    I'm a fan of both and sincerely hope you decide to offer the spicy version to the masses. If you don't, please keep the recipe so I can special order it from you!

    made the jerky, was really good, interestingly enough the flavor really switch. The flavor was hot in the front and sweet on the back. not super hot (more like a 3-4).

    Took 5lbs of 90/10 Angus

    2tbsp of rub per lb
    1/2tbsp of Morton tender quick per lb

    mix everything together and let sit overnight, be sure to mix again sometime during the curing process

    put in jerky gun, use jerky gun to spread mixture onto the drying racks, then take some Worcestershire and the rub and mix together (to taste) and use a basting brush to apply to one side of jerky. I also ground fresh peppercorn on top as well (which may of added some heat, but I made a pepper jerky batch a couple weeks ago and was not as hot as this batch). Next turn dehydrator to 155 to 165 degrees and dry till done, flip over halfway and apply the Worcestershire mixture to other side of jerky.

    Drying time will vary depending on personal preference and ambient humidity.
