    Today is rub test day.
Rub-a-dub is on the left. This was before the final coat.

The butt with your rub on it was the smaller of the two I did, and man did it turn out really good. The bark with the rub on it, as I initially feared, is a tad spicy for our tastes, but I don't feel that heat carried through the rest of the meat. It's not overpowering, but lingered the more I ate it. As others noted, it's on the back end. Aside from the little heat, the rest of the flavor profile was awesome.

I know I'm a puss, but we don't eat spicy stuff that often. To a person that eats hot stuff all the time, this probably barely registers for them. But to those who don't, it is easy to feel the little heat it has.

I'd be interested in less heat and more sweet if you ever make it.

Busted out the spicey at the fam bbq. Was a big hit. Even the heat wienies liked it. We ended up with chicken with choice of original and spicey, burgers with original, and plane old hot dogs.

The hot I rank at about a 6. It's a nice balance of heat and flavor.

Beer can chicken with the spicy rub, fucking awesome, no other way to say it. My son is not a chicken person (I also smoked some salmon) but he ate the chicken up, said if I made it this way again, he would be all about it. If my son eats something, you know you've got something good.

We can definitely look in to something like that. There are two "spices" that add any bit of heat to the regular one. I'd bet they can be tinkered with to get the heat down a little more, then bump up the sugar to compensate.

I think it'll work great for you how you used it, though. It'll impart a lot of flavor, but the heat really only shows up on the bark. Mixed with a bunch of pulled pork it won't stand out as much.

    Thanks for posting this up!!!

Think of it like a suspension company. The good ones have a truck to wheel with to test out their product. The tongs aren't going anywhere. Gotta see how those new concoctions perform!

Thanks for the feedback. Glad everyone liked it!!!

This sequence of posts was high comedy.

Ribs look damn good. I had to settle for burgers tonight at my folks' place. They were good, but damn you guys and your tasty vittles on this day of celebration.

    Ho.
    Lee.
    Shit.

That looks amazing. Don't be surprised if that shows up on our Facebook and/or website, credit given of course, at some point ;).

Side note. I see you're temping at the thigh. What thigh temp do you pull chicken at?

I shredded and mixed it up, but ate pieces as I was shredding. I'll give another tastes tomorrow to see how it tastes after mixing.

Finally got a break in the rainy weather we have been having and got to try out the Rub a Dub Dub on some ribs. The rub had a sweet taste up front and a little heat on the back end. I would have to say the Rub had a delicate flavor and let the pork flavor shine thrue instead of masking the flavor of the ribs or just overpowering the pork like a lot of rubs seem to do. Overall I was very impressed. I made a couple racks with my old standby rub mix and 1 rack with the Rub a Dub to see the different flavors. Is it bad that I gave the family the regular rubbed ribs and hogged the Rub a Dub rack for myself? I couldn't help it they were that good. I would have taken pics but when I picked the rack up it literally fell apart from the tongs and I didn't feel it was pic worthy because it was falling apart offthe bone. Over all I have to say they were delicious.

Love to hear it! Nothing wrong with keeping the choice product for yourself.

I've found that for a lot of people, my average is outstanding to them, so I'm not losing any favor keeping that slice of brisket, just past where the flat overlaps the point to myself ;).

We'll have more available soon enough!
