Not sacrilege at all. They are just like fatties in the sense that they are whatever you make them. No rules other than the framework of ground meatballs wrapped in bacon.

Not quite sure yet but budget wise, I am leaning towards this...

I bought this small grill a couple of years ago since it was small and portable. It was made to double as a side fire box also.
    585d0fc7-2038-4e0e-a6a9-202b88692f8c_1000.jpg

For $108 plus tax I can purchase this grill

and bolt the side fire box to it to turn it into a slightly smaller version of this one.

So basically, for less than $120, I have a new smoker.
It's not the BGE I desperately want but can't afford, but it should do much better that that POS I used last week.

I need the smoker box attachment...I found an older complete box sitting beside the dumpster I still use..all it needed was a cleaning and a couple bolts to hold the wood slats down and it works decent. It doesnt hold heat for long hours like others but if you have the time for watching it, it does work.

Well, I had to send the wife to get another bag of masa. Fucking nice chewed up the bag I got yesterday. On a side note, I apparently have a mouse problem now.

I havent seen one since we moved in years ago. This whole tamale deal has been frustrating. One thing after another. Starting to think the world is telling me something.

Any comments or concerns with buying a Oklahoma Joe Longhorn 3 in 1 smoker/grill?

Need to get rid of this damn Infrared POS I have now and get back to a real grill.

It's a bit sad. I have to get rid of the black one to make space for the new one.

I don't know how well made these are, it was definitely a learning experience.

That's what I have, don't regret it one second. Bought it in a hurry and mostly cause I needed a grill assp. Thought hell, this will do it all.

The grill heats up to over 400 in less than a minute. Smoker part needs some mods that might cost you $20. High temp caulk all joints during assembly on the smoker box and charcoal grill side, buy some nomex cord for the doors, and dryer vent for the exhaust stack to bring heat down to grate level. After those mods, I can get about 6 hours at 225 with one load of coal, minion method.

It does everything fine, but doesn't excel in anything. All my smoking has been done on it, and I've had no complaints with my meat and cheese to date.

PM me if you want to chat further about it.

Wrapping the onion with bacon... start the wrap so that the bacon comes up the outside, then drop the end down thru the middle. Going the other way is a PITA. Just ask my wife! (she did the wrap). I had to tell her to do it the other way tho, good for me!

PS. she does not take constructive criticism
    very well. :(

Nope! But I've let her hang around for 38 years, way longer than the 2 test wives I've had. I guess I may as well keep her. ;)
