    I guess it is quite a bit; 3 batches filled 10 Bradley smoker racks (mine and Randy's smokers) twice. We make the brine in kitchen size trash bags, put in the stripes of salmon, then place in our cabela's meat tubs in fridge 18 - 24 hrs, rotating (turning over) the bags several times to get a good soak/coating.

    Last time we smoked first 10 racks 2 hrs, then canned all of that. Second 10 racks we smoked all the way thru and vacuum sealed.

    Both Randy and I feel like this recipe yields the best flavor of the various ones we've tried over the years. Before this we were doing a simple brown sugar, kosher salt, and apple juice brine for the last few years...tasted plenty good, almost like candy due to the sweetness. This new recipe, the sweetness is balanced out by the other flavors.

    Totally outside the box...maybe even to the point of "HAVE YOU LOST YOUR FREAKIN' MIND?" ...

    ... but sell 2nd Gen and put money into 1st Gen rebuild/repair/build up for all your required uses:
    1) 4x4 all terrain capability
    2) streamlined maintenance upkeep and labor costs of only 1 vehicle
    3) classic 1st Gen uniqueness and value

    :notsure: maybe I'm :crazy: but for where you are heading with your plans at the new place ... it could be the ticket.

    I know the current truck is your show pony, I said outside the box and crazy. o_O
