Indeed you do. I really love the southern U.S. It really does seem like it's a different world down here.

 

I only said that because I don't really know what bourbon is.


On top of that, the closest I've come to the south is Houston. Florida doesn't count.

 

Ah, I see. The only reason I mentioned bourbon after the corn comment was because in order for a whiskey to be classified as bourbon, it has to be distilled from a minimum of 51% corn mash.

And Houston isn't a good reflection of the south. Too much crime and humidity.

Ooh! That sounds good! I haven't narrowed anything down yet, but I'd like to use a Jalepeño Cheddar roll for a bun. That mayo-macha may set it off nicely.

Do you just blend it together, or is there a powder form of the chile I can look for?

 

no its a natural chili, i think you cook it, then add it to the mayo and mix
i ve tried a panini, with that stuff, salami, gouda cheese damn good

 

Yeah, I knew it was a natural chile, I've used the whole chile before in sauces. I've never heard of it in a mayo before. I'll look around at my local market and try some stuff this weekend. Me and my 2 other roommates are going to enter some recipes. It's worth a shot, the prize is about half of our tuition.

Is that what it's called, or is that just the region it's from? I'm in Austin, TX now, and we're pretty close to a lot of Mexican shops and markets.

 

I think is Chester or cheddar, but the Mennonites call it chihuahua
