    Brisket is great, but is not anywhere near as easy of a cook as a butt. Make sure you do a lot of reading before to maximize your chances of having a good outcome. For starters, do a whole packer if you can (point and flat). A lot of grocery stores around here will have only the flat, which is super hard to keep moist on its own.

    I always use BGE forum for tips (generally the info can be used across any type of smoker). I just go to google, type in BGE forum... and then whatever i am cooking. I'm sure you could do the same with a WSM forum.

    I've been doing a lot of pecan and apple lately... mainly because the bags went on clearance recently, but I like the pecan

    Great technique. Some in this forum do the hot fast brisket too which can be great but I'll let them chime in with their techniques :)

    My goto pellet is Maple-Hickory-Cherry blend. Really nice flavor on all meats I've tried it on. Mesquite is great but at times can be very overpowering and bitter.

    Brisket all the way, even if it's not perfect it's still probably pretty darn good. Only way to get better is to do it again and again and again. I know this hobby has really caused my food bill to go up lol.

    Ride-Rites, Everything Weather-Tech Makes Added some 12 volt outlets with relays
    Not the cheapest but I found pre-sliced brisket for jerky for $4.99 a pound. Just saving time and waste from slicing my own made it worth it. All the BBQ folks seem to have cleaned out stores lately. About 1/3 pound strips.

    It gets worse on the brisket if you think about how many fat lbs. you are paying for, so don't think about it.

    thats the way it was in Maryland...I finally found it at the cheapest market you could find. I havent made any in a long time though. Some Legua tacos sound good though!
