    Finally used @bvbull200 spicy rub. Couldn't do a smoke today as I was out golfing but threw it on a rib eye and a NY cut. On the grill right now for another 5 mins then I'll get to taste it finally!

    Fuck that stuff is good. I thought I had taken a pic in the first post but I guess it didn't upload. @bvbull200 mskr more of that spicy hot damn! Loved it. My pops loved it too. Sweet with a nice heat finish. Not too spicy. Could go for more but I think it's really good as is.

    I started with a 9.5 lb hickory smoked ham. I made some cuts in the fat, rubbed it down, put it in a pan with some apple juice, and smoked it with a mix of hickory, cherry, and apple. Smoke ran at 250 ish, with some higher fluctuations periodically, basted it about every hour after the first two hours. She took about 6.5 hours to get to 140. Only about 2 lbs left. That skin was awesome.

    Paired it with some just picked green beans from the garden. This was the first pick of the season for us, and we got two pans like this full. I rinsed them off and steamed them.

    Wife made some potatos, peppers, onions, sautéed them in olive oil on the grill (no pics, they didn't last).

    I cut most of the meat off the bone, boiled the bone and some chopped up fat in some water for awhile with some onion, garlic, thyme, salt and pepper. Strained some of the remaining fat chunks off, chopped some potatoes, and remaining green beans, threw them in and simmered until potatoes were tender. It was pretty good.

    Ok, some GMG news today...

    Starting Aug 7th Sams Club will have the GMG Davy Crockett on sale, online only, for $299. It’s 12v or 110, Tavel model. I have actually seen pics of the sales flyer.

    Also, for those with a non-wifi GMG JB or DB, you may actually have wifi. It appears they made one control board with wifi and either installed the antenna port or covered it up. I can confirm that my non-wifi JB does have wifi. I was able to connect to it via my iPad with the app. It did control the smoker. Some people, have ordered antennas to add to it. Waiting to find more info from those guys. The gmg FB page has blocked conversation about this discovery.

    How was the chicken? Looks great in the pit.

    The mini-WSM has been around much longer than the 14.5" WSM. I'm quite sure that the success of the mini-WSM was a major factor in Weber finally making the 14.5". Either way, it is a pretty handy size for a lot of uses.

    YEAHH!!!! Glad to hear the review! You know what the hang up in production is right now? Storage. We invested in a large (for us) food grade storage solution. The last thing the dealer told us was that one of the colors of lids that we ordered was out of stock, so we either have to wait 2 weeks or pick a different color. We couldn't care less about the color so long as we have 2 different colors (spicy vs regular), so I picked a different one, but shipping had already been delayed a couple of days, which realistically causes us a week since production is on weekends. Ugh.

    Hot damn, that looks good. Skin looks amazing.

    I love fresh green beans, too. Steamed with a wee bit of salt for me!

    yeah no kidding...I just had a thought, I think walmart does price match, some one in Texas walmart needs to show prices on brisket there so we can price match in more expensive places.


    Also I took 2nd place in the small town annual rib contest, won $250 and a 3 pack of ribs that couldnt get cooked! I think I should have won first but Im biased...;)

    That's badass! Congrats on the 2nd place finish.

    Might start production again next week. Depends on when our storage containers come in. Got hosed on the shipment due to an in stock issue with the lids.

    Dang, great deal. Tempted to pick one up to make pizzas on. The full size version of this is my main smoker.

    For today, I wanted some carne asada, so I went to the grocer this morning. Flank steak was $12/lb for some reason, and skirt was $11. Ended up with 2 lbs of top round cut thin for less than half that price. We'll see how it does as carne asada.

    There were also flanken-cut short ribs there, which was a surprise, so I bought some of those to make tira de asado.

    So looks like it'll be high heat for me today, but I get to use the grill all the same.

    Was just rolling through Costco, saw my first meat-sickle in 3d. $15/lb and it was a 2 lb stick o' beef. Couldn't quite justify it.......
