    Sparging 10G of Pils now.

    16 lbs of Avengard Pils
    7 oz Acidulated malt

    Hops will be Magnum (60,10), and then a bunch of different Nobels at heat off.
    This is the perfect opportunity to use up an assortment of fractional oz bag leftovers from previous brews (Kolsch, Gose, etc.)

    5G will be White Labs South German (WLP838)
    5G will be White Labs German (Wehenstephan)

    Yes, kettle soured (acidulated) with help (Walgreens Priobiotic, 10B cells/capsule Lacto Acidolphus/Lacto Rhamnosus GG, 30 capsules).
    So it was mash, sparge, boil for 10 minutes, chill to 95-100, add capsules. Leave outside in Houston summer heat. So I started at about 95-100 Saturday, it was 90 or so Sunday morning, reheated to 95, and finished in afternoon/evening.

    I added 1 lb Acidulated to that recipe. I couldn't find his probiotic (Lacto Plantarum), but I did order some from Amazon for next time.

    Victory at Sea is a great beer. But yeah, they can go drown themselves in their overpriced Sculpin that isn't half the beer it used to be before they started mass producing it.

    Comparable Firestone Walker product slaps them silly.

    I need some advise on my upcoming reception/party. There is a good chance over 100 peeps will be there but they don't all drink beer or are BMC drinkers. I had a game plan but now I'm questioning the amounts I'm brewing;

    Blonde - 10 gallons
    NE Pale Ale - 10 gallons
    IPA - 10 gallons
    Saison (table saison <5%) - 5 gallons
    Sour - 5 gallons

    Do you guys think what I have is enough or should I adjust any of the volumes? It's pretty much a brewery we've put together and it would be a shame to run out but on the other hand I don't want to be left with 20 gallons of beer I would need to drink.

    Well, you're at about half a gallon of beer per person if all 100 people drink. That's about 3-4 pints per person. I would think that's likely sufficient.

    I'm thinking we'll have plenty but I have buddies making me question it. Do you think I should up the blonde to 15 gal since it's a lighter beer, it could be hot, and the BMC drinkers will flock to it. Maybe take the IPA down to 5gal, I don't know, I'm stressin!
