    I save the driving for once or twice a year and the dog attack after 18 plus years of that it is a bit boring :} But if you ever come down this way I can put you in a suit and let you have a go with one of the pups if you like :}

    Ah ok , Damn I am seriously looking for a new set seems you can't get more then 14 years out of them like you used to be able to . Was looking at Maytags but the reviews for the ones I want ie Straight mechanical no bells and whistles SUCK .

    Been awhile since we have had knife talk..

    Was time to cut the maple cured bacon tonight.

    Zwilling Henckels professional S series 8" Chef and Slicing knife, the bacon sticks to the blades on both when cutting. The slicing knife obviously works better than the Chefs knife. The Chicago Cutlery 5" boning knife just doesn't work that well although it is my go to knife normally.

    Tried my 10" scalloped edged brisket Slicer knife on the bay thyme bacon half earlier in the week. Not really the best for thin slices which I prefer but are still about the same as store bought thick sliced bacon. The pro S slicing knife works better for me. Still not the best though.

    A thinner blade I think would be better. So thinking it may be time to try a Japanese blade instead of German. At 10" think we are getting into sword territory.

I have never cut bacon like that just going on a thin blade will walk with resistance .

    Also for hams and turkeys. Not sure want to spend that much money on a "may work" knife. But sure is pretty. Sort of like shooting a gun with a EELL wood stock. May not hit every bird with it but damn it makes me look good missing.

    Yeah I tried a filet knife forget that one cut was enough. And think I knew that before I even started it. Sounds like the Shun slicing\carving knife is more solid and may just work.

    It gets colder I need to make a care package and send it East to you. Right now any bacon or jerky would be spoiled even with ice in a cooler I'm afraid.

    Not caught up...and I might not ... I'm too tired. Followed the week of fishing and hanging out with Mitch's inlaws and their visiting family by spending all day today helping Randy with his toy storage barn/workshop raising. We got about 2/3 the way through today .. little bit further to go yet. Starting back up at 0930L tomorrow morning.

    Good evening Rob! That is what a lot of people use for bacon that make their own. You have to cut the belly to make it fit but it will work. As you know they are a PITA to clean. And many also say if your going to use a slicer just break down and get a used hobart commercial grade. Have considered that too.

    I have a jerky board and slice my own with the brisket knife. Strange but for some reason I like to use a knife. Although thinking the next eye of round I get will ask the butcher to cut it for me into 1/4" slices. Cutting my own jerky takes somewhere around half an hour. An electric slicer would be a lot less time and more consistent.

    That is a work of art, not sure if I could ever learn to cut veggies with that LOL.

    So been gradually having the pups spend more time together in the same space. Outside to start, inside and on the deck. Some posturing but doesn't last and short periods of times only. Tonight had them on the deck with me grilling the first sweet corn of the year and a pork chop. The younger guy all of a sudden jumped on the back of the 2.5 year old and started humping him and biting him on the neck. All hell broke loose for awhile and the little shit has been in his crate since. Except to go out for a potty relief. Been 3 weeks on Monday since got him neutered Vet said it could take up to 6 weeks for the testosterone to leave his body. After that if he doesn't calm down not sure what will happen. Thought it was going good until tonight and he turned back into a wild one. But whining all evening to come out and play and try to jump on my lap. One step forward 2 steps back.
