    Used the smoker to season some cast iron this past weekend- next up another turkey:

    That is a 20lb bird for scale. Wrapped it right after the last photo and let it finish up nicely without getting too much smoke ring.

    Ignore the sign hanging on the arbor- Father in Law made it for me- nice of him- but far from the truth....

    I belonged to Sam's about 15 years ago for a few years anyhow. With a family of 4 the bulk buys were still a lot of stuff. Meat was hit or miss so dropped it. Local packing plant has some of the best pork bellies I have ever seen. HyVee grocery store sells prime cuts of beef, and good ones. Basically only me now so warehouse purchases don't make a lot of sense for me. But after seeing some of the cuts of meat that people are picking up from Costco on here and other sites I'm headed to Groupon to look for this discount it is only a few blocks from the office. Might actually make me go into work more instead of working from home so much.

    Costco is all about the $1.50 hotdog and drink! That and wandering around on the weekend eating free samples for lunch. Sometimes there are so many that you have to pace yourself if you want to try them all. It’s not about being broke, it’s about being frugal and eating like a king for free!

    Minion method, keep the food on other side away from coals, have a temp probe for the grill grate temp as well as meat temp (unless you're doing ribs... in that case, use the bend test).

    Old setup on my 22 weber worked pretty well about 6-8 hours iirc.

    Cons: cook space is very small especially if your wanna do a brisket.

    Edit: also I didn't like how the meat was so close to the fire, so I'm sure the grill grate temp differed from side to side.
