@Cold Iron . Got grillin with a vortex insert question. I trying to get my wings nice a crispy and everyone I’ve seen using the vortex was talking 30min at around 400 -500 degrees. I'm using a temp probe clipped to the grate as my base model Weber doesn’t have the built in gauge. Had the temp up to 450 when I threw the wings on but then struggled to get the temp to 350. After 30min probed the thickest wing and it showed only 160 degrees. Left them on their another 15min but they were overdone. Not bad but still overdone. Guess my question is: should the grate probe and a lid gauge be close in readings? Just wondering if overdid the temp trying to get it hotter, when it was fine where it was.

Eh. I'm not sure when the last time you did that was, but I wouldn't recommend it.

Not that most of the under 30 crowd would know what to do with it if they did lol

The lid gauge that comes with the Weber, and most grills, is basically worthless as far as accurate temperature readings. However once you know the "relative" settings on them and how things cook at a certain setting they can be useful. A remote read is going to be more accurate 99% of the time.

It is a fine line with the Vortex things go from not done to burnt pretty fast I noticed. To get max heat open all the bottom vents and the top vent fully. Then I think the important part is to rotate the lid vent 90 degrees every 10 minutes or so. I don't worry so much about grate temp and when the lid is off they basically aren't cooking. I did mine at 50% open for the first 15 minutes or so to make sure they were cooked well on the inside then opened everything to 100%. Not sure if that is required just something I thought I'd try and it did work. When fully open the skin was bubbling it was so hot. And I used lump hardwood on top of kingsford. Lump is normally hotter than briquettes. Hope that helps and makes sense. If not let me know!

You might be right LOL. I didn't even put the connection together until you mentioned it.

Ok, process of elimination - don't worry about the lid gauge and the guys that use that as a reference, take their results with a grain of salt. I just need more practice and should probably experiment with a few different types of charcoal. Had some potato bombs on there too that turned out great after an hour/20. The bacon and potato skins essentially became one.

You don't need all that new fangled crap. Just get your coals to the hottest then watch to where they are just starting to go down (from just a touch of black to full gray) and go for it.

I have never stopped driving and that CDL will burn in the kiln with me

The best thing about working a service desk at a Pete dealership is I have "eyes on" both the good & bad...My thing is I get to "Test" all of them and I can tell you who is "making it" and who is one hic-up away from going broke...:(

I have 2 good freight connections available with one being local and one being

regional ;) BUT that mortgage payment of $2500-$3800 @ month puts dampers

on "Kicking back and enjoying Florida"

But hell I am only 56 and in good health :p , why the heck not....:burnrubber:

Plus it would be a 550 hp Cat powered Glider or a very "young ISX 600 hp"................not my 1st rodeo.....Momma and I have had 4 Large , 2 Pete's and 2 KW's and she is still married to me
