    We did that Costco membership deal on Groupon so I plan to go check them out tonight or tomorrow. Just got back in town and we WILL be smoking something this weekend and it WILL have the rub-a-dub on it. Hope the prices are decent beef is getting out of hand.

    Costco has always had the best quality meat for the price. They sell 3 racks of ribs for about $12-$19 depending on weight. I always get a 3 pack of their ribeyes and smoke them for 1.5 hrs then reverse sear over high heat:)

    On old fashioned squishy white bread. Mayo. Or even better yet spread bacon grease on the bread. OK lunch time now. All out of white bread used it up on my last batch of homemade bacon.

    But about 4 pounds of bacon left. Check that 3.5 lbs. had at least half a pound for breakfast this morning :)

    Nice, we have been with Sam's for a long time. The deal made the membership all of $5 for a year after the coupons are used and the gift card so I figured what the heck may as well try it. If it makes the smoking of meat cheaper and it's as good or better quality than Sam's then I'm all in. I smoke then sear my steaks also :) some of the best I've had since I started doing it.

    I did too got my coupons in the mail yesterday. Got back from Buffalo NY on Monday night. Have yet to step foot in Costco and hoping the beef is decent also. I can get Prime beef pretty reasonable and thick, I like at least an inch and half prefer 2" or more. Don't mind paying for it as long as it is quality and what I am looking for. Another source of pork bellies isn't such a bad thing though at the very least.

    No that's what I figured another good source for the things I like and buy anyway is never a bad thing. Hopefully I will be able to get there in the next day or two and scope things out.

    Smoking up a nice chunk of Marlin today. I brined it last night and tossed it on today at 200° with some apple wood. I'll bring it to 155-160 internal then pull it and let it cool I'm fridge. Some will be eaten as is, most will go in a smoked marlin dip.

    It has color like tuna but unfortunately tastes nothing like it. Most people smoke it and add it to recipes. Not great on its own.

    Yup same idea. My dad used to use marlin, kingfish or sailfish for the dip. Made for a nice side dish along side fresh dolphin.

    I always preferred crackers, fish dip, and an ice cold beer as my pre dinner snack while cooking the dolphin.

    I get briskets at dare I say Walmart. I hate Walmart meats, produce and grocery but their briskets are cryo-packed are usually pretty nice and about 1/3 the cost of local grocery stores and you get the whole brisket. Local grocery stores sell the flat and point separately.

    Most of the briskets I but at WallyWorld are about 17lbs. So at $50 that's about $3 per lb. Giant foods is something like $8.99 per lb just for the flat. Yes $50 is expensive and you do pay for a lot of tallow (I cut a lot of the tallow off and grind it in with super lean eye of round when making poodle dicks) but for the quantity its still relatively inexpensive.
