I haven't gotten the 35s yet but don't think they will work. I don't recall seeing anyone that had the flares with 35s.
Here are some pics of my 295/75r16s at almost full stuff that show how close to the flares these are.

In the back my bed is cut so the areas your close seem like they may work... I don't mind a little rub... I did the round screw flare mod and it makes things really nice...

    That front is tight though...

    295 that's like 34.5 or something right?

I am interested in doing my new garage as well! Maybe they will make a deal if we book 2 houses at once.

I did my own epoxy almost three years ago and it has held up just fine. The only advice should you do it yourself, get a broadcast spreader for the flakes. I did it by hand and it was not consistent.

I did the Rustoleum two part kit, legit epoxy. I did the acid wash and cleaning before I moved anything into the garage. I even had some welding slag fall onto a spot and it held up, I've missing a thing or two with a hammer and smacked the floor with no chips. Stuff works pretty good. I also had them mix in a custom shade they offer that matched the tones of my home better than the base colors...
