    Costco isn't bad ... under-rated actually. I used to work there for the Pizza Kitchen ... they use some quality ingredients. I know because would buy the items in the morning directly from the store and then start prepping dough.

    My parents were going on and on about the costco pizza, they loved it. Finally tried some when I was over there, pretty dang tasty.

    We do stuff like this all the time. Ghetto canning. I don't worry about it. I also make kimchi and have fermenting fish and oyster juice sitting at room temp on my counters for weeks at a time so take my advice with the grain of salt :D

    This is an awesome thread!!!!!

    At the firehouse Im at, every Saturday is pizza night at all 9 stations. Some of the best pizza I have ever eaten.

    We make everything from scratch,
    dough and sauce. I will update a pic my next shift day. We usually make 8-10 pizza's, 1 per guy.

    I've heard that fire fighters are some of the best cooks. Usually (with luck) have plenty of time in the station to go all out. True?

    Sauce:
    1tbl. Basil leaf. 28 oz can purée, 28 oz can sauce, 6 oz paste
    1 1/2 tsp oregano
    2 tsp fennel whole
    1 tsp Italian pizza seasoning
    5 tsp sugar

    Cook sauce min of 3 hours on super low heat. Cool prior to making pizzas.

    Dough:
    1/2 water
    1/2 milk
    1 cup total per pizza, Luke warm before adding yeast

    3 packs quick rise yeast
    2 tbl spoons crisco heaping
    3 eggs 6 pizzas, 4 eggs 8 pizzas
    1 tbl spoon salt
    1 tbl spoon sugar
    1 tbl spoon of baking powder
    5 # pilsbury flour

    Mix salt sugar and baking powder, warm liquids and add yeast. Wait yeast activates then add crisco, eggs and flour. Let dough rise until you roll it. The longer the better.

    Now this makes a lot of pizza's!!! Some guys make it with warm beer, some use coffee cream. I like this one.

    I also use Fleischman quick rise yeast, Cerasota non bleached flour. It makes a difference.

    Nice! I never put Crisco in my dough but I think ill add a dollop to the mix tonight.

    I also grease my pans with it, crust turns out better that way instead of oul or pam.

    Im a lil ocd when it come to my pie's.
