A buddy and I split $60 on a sample of 60 year old scotch at a whiskey tasting event. It was fun but the whiskey tasted like watered down whiskey.

As far as maturity of most single malt scotch they peak at 18-21* years in my experience. Older whiskey is also good but you pay a premium for that age.

This of course is all my anecdotal experience.

I think it's only going to age so much with wood. I've seen this by experimenting. The wood chips only release to an extent. A lot of whiskeys start out as a grain alcohol but there is a brewery near me that distillate their oatmeal stout beer. Anything longer is the "angels share"

And as far as that bottle in the link , I really couldn't tell you about that , I've never had that particular one before . Sure it's a lot of money but I don't know because I've never had it. The other one (18 year old) is a classic

I'm waiting on some heavy roasted cubes from Midwest supplies for next batch. People look at me weird when I put a couple gallons of everclear on counter at register. Still nobody questions me which I hate. I enjoy making my own whiskey. Got some roasted coffee bean from a local coffee house ,"jet fuel". Should be good.

    Yea
Try it some time. They bring on a great taste if you like coffee that is. Sometimes I've added a few roasted beans in my glass. As good as chocolate covered beans.
I like it, may not be good for everyone.

I use jack daniels barrel wood chips that they sell for bbq smokers. A handful in a mason jar let it sit 6-8 weeks.

    That's what I'm talking about!
There's a couple of Homebrew shops nearby that have charred chips but I like the cubes they last longer. I just keep adding to carboy. I'm bad on not dumping the old chips but think they add a little character. Sweet feed makes a good rye also.

Goddam! Never knew this fine thread existed until tonight!

I love bourbon and rye, but I'm slowly developing a taste for good scotch. Always on the lookout for good whiskey!

    Favorites:

    Buffalo Trace (for the price)
Eagle Rare (best bang for the buck)
    Blanton's
    Four Roses Single Barrel
    Angels Envy Finished Rye
    Balvenie Single Barrel 12 Year

    The roster as of tonight:

    I hear you.

The Basil's kinda just sits there. Might be that I ended up with an iffy bottle, but it just seems pretty one note to me, so it only gets accessed when friends are over.

Eagle Rare is a different story. I'd love to lay hands on some ER17, but it's a fucking unicorn.

Maybe it's blasphemy, but bourbon and good hot chocolate is pretty amazing while camping.

I have been eyeing basil for about a year now. Haven't pulled the trigger because I havn't seen any good reviews or hear anything about it.
