Decent. Some nice stuff upstate and the climate is a bit cooler. Still undecided and on the search.

 

Bonneau Beach on Lake Moultrie. Stopped at a dive bar yesterday out there and had lunch outside. Amazing view for a lake.

 

Holy crap. 38 bags? I am down to my last two...

 

We're definitely doing chicken this weekend. We've had so much beef and pork lately I'm starting to moo and oink.

Did you ever say how you were going to smoke the rice?

 

How you doing them? I dry brine, spatchcock, and pull with Alabama sauce.

Still lookin to see how you're doing that red rice.

 

Brine breasts in pink salt and water, rub, then smoke. I've never gotten around to doing the spatchcock method on a whole bird.

 

I know it's an extremely lengthy drive for you guys in the Carolinas...but does anyone have any interest in going to help in Houston this weekend? I'm possibly driving down tomorrow from Alabama, if I can get a good plan together. I just know many of you have capable vehicles.

I was thinking parboiled rice, but yeah, makes sense to cook the rice beforehand either way.
