    This will be my 4th time with this type of pit.
    Gonna fire up charcoal Sunday evening be ready to serve by lunch on Monday hopefully lol

    A folding polyethylene table properly cleaned makes a decent prep table lol. Skin side down and it's it's own sheet pan. If we lose some juice on the ground no harm no foul plenty to go around :)

    They featured this technique in "Barbeque" film only the dude makin it rolled a bamboo spit back n forth manually
    I think the spaniards originally exported the style but every region (Cuba, Philippines etc) has a unique twist

    Yes. Lechon. But google "lechon Cebu". That's the original. Like saying brisket. But what you really want is Texas brisket :D

    Yes some manually just roll then bamboo back and forth Some will have an electric powered pedal to to spin it Especially when you're doing more than 1 at a time.
