    I might have to try the Mongolian boodog technique on a groundhog. Then again maybe not lol

    In the film truchador posted on Netflix the guy is in Cebu and states that people come from all over for the lechon. I was in PI at least a dozen times back in the 70's haven't been there since 83. But would love to visit again and Cebu would have to be at the top of the list. Ate a lot of what supposed to be monkey meat on a bamboo stick back in the day from street vendors. Not sure if it really was monkey meat but damn it was good as in the best bbq meat ever had. Drinking a couple pitchers of MoJoe first likely didn't hurt though :anonymous:

    I'll pass on the boodog LOL. Marmots are in short supply around these parts but used to shoot rock marmots in the West. Only made it half way through will watch the rest this weekend. After watching the part on Japanese white charcoal (Binchōtan) had to go spend a couple of hours researching it. Can't help but think a lot of potential there especially for camping with a small grill. Extinguish, pack up and go then reuse down the road. Especially at the price it cost. But a month to make it understand why now.

    Have a feeling there will be a lot of good smokes posted here over the next few days for inspiration.

    Doing 2 racks tomorrow for friends and fun

    Did a little shopping and got some coal
    KBB 2 pack 36 lb - $10 ($0.27 per pound) - total experiment
    Royal Oak - 13.5 lb - $13 ($1 per pound) - My current bag is hard to start but then no probs
    Frontier 35 lb $20 ($0.57 per pound) - Used this earlier this year and like it

    Tomorrow I'll just go with what I know for coals so I don't screw up the cook

    monkey meat? man I don't know..
    I've had horse meat. It was great. Only reason why I ate it is because no one told me it was horse meat until we were all done eating.
    Last time I went to PI was about 15 yrs ago. so definitely eating a lot when I visit and definitely going to Cebu.
    We ordered this roasted pig here in Texas but just not the same crunch and flavor

    Nothing wrong with horse meat as you found out. The rest of the world eats it including most of Europe. But Americans love affair with the horse makes it pretty much taboo here. If people were hungry enough they would eat it, and find out they like it.

    About 10-12 years ago PETA (and NOT People Eating Tasting Animals) managed to get horse slaughter houses banned in the US. It back fired because now no one could put down older or injured horses. People had to take them to Canada or Mexico to be put down. Or use a backhoe and shoot and bury them on the back 40 of the farm which is what normally happens. So a couple of years ago Congress finally overturned the law. But no slaughter houses have opened back up in the US since that I know of. Too many government regulations to jump through so not much has changed.

    And then there is Shell Cordovan. It rolls instead of creases and lasts pretty much forever. Eat more horse.

    Yes. And it depends but yes if you want a CC set. Although I prefer the original wood handles and brass rivets. IIRC you can get that set new for ~$30 with all the pieces.

    Tossed my old farberware set, paid $1 as one of the steak knives had a broken tip. Now it is the new set in the tear drop and I have a boning knife and a small fillet knife to fill in the slots. They cleaned up nice and we don't eat steak so no loss on the knives.

    Have to test them out on some trout next week.

    I think you can have your horse taken to a rendering plant that will process, but not for human consumption. They generally take dead animals of all kinds and old meat from supermarkets, or recalled meat etc. I've eaten horse in Canada, Italy and Germany. I know a Belgian that lives in CO that has horses and he assures me that he slaughters and eats his horses as their time comes.
