    I've read that horse is only surpassed by mule for taste - personally I have not had the chance to taste either but I would. Same for a lot of other animals, vegetables on the other hand - I've tried enough to know what I don't like, thankyouverymuch.

    That's a lot of white/blue smoke for starters - from what I've read, that's a bad start
    When I'm cooking I let that stuff burn out and then put on my meats - it also lets the apparatus come up to temp before my meats go on.
    That said, if you like your outcome and the process then rock on Good Sir because that is the exact reason there are so many flavors on this planet. You aren't right or wrong - just different. Be you and enjoy. Thanks for sharing.

    also if anyone goes to Golden Corral they have some decent brisket on friday nights...I was actually surprised how good it tasted!

    Pouring down rain this morning so it took longer to get the smoker lit up, but she's rolling now! I just hope the rain lets up so its not such a soggy smoke.

    Hahaha thats probably the best thing ive seen! I lit the charcoal in the shed hoping it would smoke any critters out that have taken up shop. Two birds with one stone i say haha. Its so humid down here that the paper that the charcoal came it struggled to burn. It was bone dry too. Its gonna be a good day though!
