    That sucks about not being able to go pheasant hunting. I really look forward to my road trip from CA through the west and plains out there every year. I take off the day before Halloween this year and get back just in time for the second dove opener in November.

    welp that was a bust. I totally missed the BBQ comp.

    Children's soccer games and my wife dragging ass are to blame.

    I did get to talk to a few competitors but no one had any meat for me to try.

    Oh well. Maybe next time.

    I did the water in pan quite a few times at first, it did help with temp stability but I eventually got good enough with the vents to compensate. Water sure doesn't hurt but to me it's just one more thing to deal with.

    My bad .meat rack sits on top of water pan .My water pad is the deep one that sits right above the coals. Hood temp was 250 and grill temp with my digital term.was about 230 so know wasnt too hot.
    Guess will see if waterpan cover deflects moisture away from meat or just wont use water pan . Thanks. :thumbsup:

    Meat not really steamed but lacking the smoke look . Water boils alittle .Should get it dailed in next smoke .
    Plus was distracted with my project
    Replacing b pillar on a rav 4 lol...

    Good luck! With the drought in the Dakotas if I have to miss a year sounds like this is the one to miss. On the other hand looking like I will get at least my 2 weeks in ruff grouse hunting on the North Shore of Lake Superior, starting a week from today. Drum counts this Spring are up and my friend that lives there is seeing twice as many birds as the last few years. If work changes their mind I'm going anyhow LOL. Picked up a Jumbo Joe to cook up there, a couple more mods and will be ready with that too :)

    I reversed seared some nice thick ribeyes for us and some friends. They were good.

    Agree with the stability issue, only makes sense, more heated mass. In my twisted thinking, I think fat dripping on to the hot empty water pan (wrapped in foil) produces additional smoke flavor.
