    Turned out good. Although they were pretty darn lean and the rub didn’t penetrate that much. Should have gone slower.

    Thick pork chops (even bone in lol) don't do it for me cuz all that dry homogeneous uninteresting meat between the flavor crustage lol
    I go 1/2" or thinner :)
    Going slower would have likely dried em out even more.....

    When we butcher our hogs we do bone in chops about 1/2"
    Might have to try thicker next time

    I guess my point was that farm raised pork shouldn't be like that. You're telling me you raise and butcher your own pork and still think they taste like homogenous uninteresting meat?

    No our park is awesome, especially when the milk cow is producing and theres leftover whey from the cheese processing in their diet :)
    Sometimes we slaughter n butcher and sometimes we take them to the little meat processing place about a mile down the road
    It's just that I've never done thick chops with it cuz meh experiences in the past from store bought lol

    Will do. I should have some handmade inventory coming up this week. As for the rest of it....


    We have officially given the green light to both the original and spicy rubs! I won't get too deep in to the nuts and bolts, but we will be getting a nutrition statement so that we can finalize the label, then cut them a check for the min purchase, then hopefully start seeing some shipments of Pitfaced BBQ Meat Massage and Pitfaced BBQ Spicy Meat Massage arrive on my doorstep.

    12 oz shaker jars and 1.5 lb (24 oz) resealable foil pouches are the packages we are going with. We are trying very, very hard to keep our prices down as much as possible. The price per ounce might creep up a tad for the 1.5 lb bag compared to what we sold 2 lb bags for, but hopefully not much. Keep in mind that the products on our website were visible to anyone, but the only people that we have told about it are everyone on here and, perhaps, a few word-of-mouth folks. It has pretty much been your exclusive pricing. We will absolutely be keeping something in mind for the amazing people here on Tacoma World, be it a coupon code or something. We wouldn't be here without you all, which is a fact that won't ever escape me.

    Awwww yeeeaaahhhhh.

    Man, I sure hope so! We're working with the rub production company on the dust as we speak. We're trying to see how far we can push the heat without abandoning the signature flavor. Hopefully it won't be that much longer before we're ready to pull that trigger, too.

    It has been an awesome 4 or so months, thanks in large part to everyone here. Even if it doesn't blow up, just having our name and our signature flavor out there is going to be an incredible feeling, not that I'm not going to be working my stones off to make this thing huge. Accounting class starts in 6 days, so I'm going to be especially busy here pretty soon. Should be a fun close to 2017!
