    This picture is from a few hours into my cook on Saturday. I did the fat cap down and preferred it. Easier to separate the meat and fat. I was also running behind so I only got it up to 186 before throwing it into the cooler to rest for two hours. Because of this I chopped it instead of pulling it. Not sure if it's because I haven't had chopped pork for awhile or what but I liked it more than my pulled pork.

    They turned out great although next time I'll try and sandwich two quarters of a jalapeno in there. Cream cheese, a scallion some shredded sharp cheddar and some rub in mix made for tasty filling.

    I think some skin on breasts or a spatchcock style reverse seared to medium rare-medium would be great :)
    @scottalot the meat itself is lean but the skin is another story. the trick would be to render the skin fat without drying out the meat. Rotisseries work great for this and u can save the drippings for making fries lol
    Of course if it’s wild birds he’s cooking there might not be any skin cuz it’s way easier to pull the breasts off than to pluck em lol

    I was fortunate enough to get my hands on some of this. Hoe. Lee. Shit. It is amazing jelly...especially if you're a pepper head. Peachy-sweet, but hot enough to make my hair follicles tingle. Habaneros are the perfect pepper for the jelly. I appreciate the contrast that a jalapeno pepper brings to a jelly like this, but the habanero is similarly sweet and works so damn well.

    I made some chicken fingers that had a little Pitfaced BBQ Meat Massage in the breading, then dipped them in this jelly. Match made in heaven.

    baby backs on the left (more tender closer to the pork loin and pork tenderloin, side rib (spare rib) on the right, comes from the belly side of the pig, a little more fattier, still tender more flavour IMO

    Spare = more meat for less money. A bit more prep work is the tradeoff.

    Some people swear baby backs are more tender, some say they cant tell the difference.
