    I got the idea from post 11645 on this thread (about 3 pages back). It was good but to much work. Next time I'm making the bites. My wife took the liquid and made gravy, it was awesome over mashed potatoes.

    Ingredients
    • 3 tablespoons extra-virgin olive oil
    • 1/4 cup lightly packed fresh mint leaves
    • 2 tablespoons kosher salt
    • 6 medium garlic cloves peeled and roughly chopped
    • 1 tablespoon ground black pepper
    • 1 tablespoon ground cumin
    • 1 tablespoon sugar
    • 2 teaspoons smoked paprika
    • 2 teaspoons dried oregano
    • 2 teaspoons finely grated zest and 1/4 cup juice from 2 limes
    • 1 teaspoon minced habanero chile or 1 tablespoon of minced serrano...I used about 2 teaspoons serrano
    • 1 3 1/2 -to-4- pound whole roasting chicken mine was about 5 pounds...these things are never an exact science

    Thanks, but what do you do with the mint leaves? I've never cooked with them.

    prob just goes in the marinade. Mint leaves are used in Greek foods.

    Toss all of the ingredients (less the chicken) into a blender or processer make into a paste and put under and over the skin. Marinate 6-24 hours before cooking. Next time we are going to marinate chicken pieces toss them in flour and sauté.

    It is different, but if done right its really good. Domaldes are really good

    Ive gotten tired of the store bought tortillas, so this morning I made some homemade ones. Unbelievable the taste difference, store bought just have an odd taste to them.

    also hand mix for the 5-6min if using a mixer It prob only needs 2-3 min
