    Chili....beans.....chili beans? I don’t know what this is, it ain’t traditional chili, and i don’t know what traditional chili beans are. But, its tasty! And I finally decided to invest in those damn liners! :thumbsup:

    Also I know you guys will think I am crazy... but Gumbo goes with rice AND potato salad. Most people do both, not an either/or.

    We're also the crazy people that have rice AND potatoes in beef stew. So it's a whole thing down here.

    Every time I have tried Chili in the crock pot the meat just doesn't end up resembling anything I like to eat. So I end up doing it in the pot as I always have and as my gramps taught me to do. Do you pre-brown your meat and then add it?

    yes, brown it and put you chili seasoning in with the meat as you are browning it.

    Oh ya I always get some seasoning in the meat when cooking it. I do two types of meat in mine ground and cubed (small pieces).

    This actually comes out really nice with beef even though it's a Bison chili recipe. I also don't put beans in mine :D

    Slow Cooker Bison Chili Recipe
    TOTAL TIME: 8-10 HOURS
    SERVES: 8
    INGREDIENTS:
    • 2 pounds ground bison
    • 1 onion, chopped
    • 4 garlic cloves, chopped
    • 1 cup bell pepper, chopped
    • 1 cup carrots, chopped
    • 1 cup celery, chopped
    • 1 jalepeno, deseeded and chopped
    • One 28-ounce can crushed tomatoes
    • One 14-ounce can diced tomatoes
    • One 15-ounce can tomato sauce
    • 1 can black beans, drained
    • 1 can kidney beans, drained
    • 2 tablespoons chili powder
    • 1 tablespoon oregano
    • 1 tablespoon basil
    • 1 tablespoon cumin
    • 1 teaspoon adobo sauce
    • Sea salt and black pepper to taste
    • ½ teaspoon cayenne pepper
    DIRECTIONS:
    1. Saute onions, garlic and bison in a saucepan over medium heat. Once meat is no longer pink, add to slow cooker.
    2. Add remaining ingredients to slow cooker and mix.
    3. Cover and cook on low for 8–10 hours.

    this is from a couple years ago, its bout getting chili season again I guess, and I found some bbq leg quarters while looking for the chili pic

    Easy chili

    3 cans kidney beans (I mix light and dark red, personal preference)

    3 cans diced tomatoes (personal preference on flavor/variety of seasoned or not)

    2-2.5# ground meat (venison, beef, bison...)

    3 packets chili seasoning (like McCormicks. I make my own from scratch nowadays)

    1 onion chopped.

    Put beans and tomatoes in crock for about an hour

    Brown ground beef, drain off fat. (I usually use 90/10 and there’s so little fat, there’s nothing to drain.

    After beans/tomatoes have started cooking, add drained meat.

    Add chili seasoning.

    Let cook for at least 2 hours.

    Add onion about 1.5 hours before you want to eat.

    And I usually swirl a half can of water in each to get it all out and add it to the pot.

    My MIL roasted ham hocks and bacon ends together in the oven and added them to a pot of homemade black beans, and made some sweet cornbread to go with it.

    always open to new recipes...

    I havent tried ground lamb for spaghetti sauce but to me its the closest thing to venison you can buy in the store, it would probably be really good. We use venison for everything. I dont think we've bought any ground meat for home use in a long time. If I dont get an elk cow in Dec we will be hurting for venison :( we might have enough till next season.
