    They are fatty enough that it really doesn't matter. Although, the boneless ones are prime candidates to make pork burnt ends with.

    My humble contribution to the pot luck today at the office.

    Had a disaster with the first one I tried to roll up. The sausage wouldn't hold together and the damn thing kept falling apart, so it never got the bacon wrap and was scrapped altogether.

    This one is 1 lb pork sausage + 1 lb ground beef. Stuffed with feta, mozzarella, spinach leaves, diced serrano peppers, and one diced habanero pepper. Given the 'ol Pitfaced BBQ Meat Massage, too ;). The bacon blanket isn't a weave because this monster was wider than the bacon. Sloppy wrap, but it'll do the trick.

    That's when you weave your weave. I have had to do that a couple of times when we have made mega fatties. Took a little while and a couple sets of hand but it was an impressive beast.

    Man now I'm wanting to do a fattie. Maybe do a good breakfast one this weekend.

    I feel ya there. I have taken to just making two of them most of the time. Sounds like more work but weaving the weave together was sort of a PITA. Next time we make one I will make sure we snap some pictures.

    Well, that lasted about 8 minutes on the self-serve line before the pan was little more than a puddle of grease a single morsel of bacon fat.

    Lots of kudos from those that had it, maybe more jabs (in jest) from those reminding me to make more next time.
