    I'm doing two small ones for faster cook time. Starting the fire (wood only) at 11:30. Meat on around 12:30 and eating at 2pm. I wrap in foil the last 3 hours and it then falls apart just cut against the grain and it's awesome. Wait no. It's heavenly!!
