    I knew a butcher that processed a lot of game as well as livestock and did a lot of custom ranch slaughter. One of the things he really stressed, especially with game, is to limit exposure to water because it can promote bacterial growth. It's better to cut away damage and bloodshot than to try to rinse it away. The cleaner you can process it the better. But, as he also said, he does this as a business and when you have 20 or 30 carcasses hanging then safety is paramount. He also had a black light in the cooler that helped kill off bacteria. And, as long as temperatures are cool enough, hanging is good. I know, as well as many others here from experience, that hanging and cooling a carcass really helps the meat set up and stiffen and makes it a whole lot easier to cut up.

    I read somewhere about some mixture to put on the inside to help clean and preserve it.
    I've never butchered one. Only field dress.
    I'm not above the learning stage..

    I've heard of some that usually involve some kind of salt but have never used any. I haven't done any de-boning and actually prefer larger bone in pieces so I get the help of any marbling and retain bone marrow for flavoring during the cook. I've always thought cutting the back strap really killed it so I'll cut across the spine and make as many chops as I can. Nothing worse than a dry loin.

    Well I think a run to Cabella's is in order.
    Going to get some small game points and look at some waterproof pull on heavy insulated boots.
    Then run to my moms house and install a router for her other Christmas presents.

    When we went shopping for a new fridge, the sales guy was trying to sell us the warranty, and I didn't want it. Well, he decided to tell me that these new fridges have a computer board in them and they have been known to get fried with sudden loss of power, (monsoons) or a power surge (monsoons). Even the most basic fridge now comes equipped with these. And a surge strip doesn't seem to help.
    I figured Ill be able to rebuild my old fridgadaire for many moons to come.
    So the guy wound up talking himself right out of a sale instead of successfully upselling me.
    Fuck em :D

    My shop does the hi-viz tshirt thing and an occasional ball cap and that's it. Don't drive the van home so I charge to and from the shop which the owner does not like. Too bad state law says I can. I went with the Rigid box set on the recommendation of the brother in law and have been happy. I picked up the basket too for loose items and the tool bags so they stay put. Milwaukee wasn't available locally to see at the time.



    Couldn't hit the like button on this. Seen to many "dead" fridges that just have to be sealed up. At least it sounds like you caught it early enough to get some things.

    Yes, luckily it has a digital display that shows the inside temps for the fridge and freezer and both were about 5 degrees too high when I noticed it. So I checked a few things, vacuumed the coils and made a run to the store for ice. I let it run all night but the compressor isn't coming on. I read a bunch of trouble shooting and figured it could be a couple different things. It was used when we bought it 4 years ago and got it at a good price so for the cost of repair I may as well replace it and start over. I ran the model number through the internet and nothing came up except parts and repair manuals so it looks to be obsolete.

    That seems to be the way of many household items anymore. If it's more than 3-5 years old its obsolete and your lucky to find oem parts.

    The other day I got my wife a new iPhone. Well, we also got this bluetooth external speaker called the UE Boom, so she could play her iTunes through it. It works really good and sounds pretty good too.
    What I just found out, is, I can play my guitar through it too. :yes: :woot::rockband: :headbang:
    Im gonna go get one for me this afternoon.

    And I’ve never had a problem soaking game meat in a ice brine . More ice than anything. I use a pickling salt now ,we have to get creative this close to the equator o_O

    I wouldn't think you would have any problems with the salt. It's been used as a curing compound for a lot of years in all it's different forms (sea salt, iodized, pink, etc.) Some work better than others but they'll all work to some degree. Ship stores, wagon trains and all other sorts of pioneers have used salt and smoke to keep pork and beef on long and unrefridgorated travels. Brining will have the same effect.
