Just a bunch of old crap
Yes, back when I actually cooked food in it. Just get the old green ScotchBrite scrubby pads (the dark green scratchy ones, not the sponge) and soak the pot in soapy water overnight and then scrub the hell out of it. Best if you pre-scrub as much of the gunk out as possible before doing the overnight soak. It will eventually come off.

You already know what I'm going to recommend.

Go with the Triplex for 2 people though. It's not freestanding, but you can guy it out with rocks very efficiently. I just put my stake through the guyline loop and put a big rock on it. Tight as a drum. Double doors, 100% waterproof, and plenty of space for 2. The Duplex is a bit snug for 2 people, but it can be done and they now have the freestanding Flex upgrade for them.

At least you already know it is beautiful area.
Do you know of Buckskin Gulch and the Paria Canyon and Grand Gulch? A couple of the places my wife and I have been, and thought you might like, the right time of year.

Best to you in your new home,

I've a TarpTent (http://www.tarptent.com/) and am impressed with it's performance - I have the Notch which is a solo but the do make doubles and larger. They require stakes but I don't think that would be a problem for the majority of Utah. There's always going to be a canyon with lots of sandy areas. The TT's come with 'spike' type stakes, not so good in sand, but larger/longer Vee shaped stakes are available from lots of sources. And there's the 'tying the corners to a rock' method. No shortage of rocks in UT. Sleeping on sand is comfy.

Some of the TarpTents are freestanding.

Bowfin 2 (also 10% off right now) has 2 doors, 2 vestibules, bathtub floor - https://www.tarptent.com/bowfin2.html

The Double Rainbow can be freestanding with trekking poles but it's pretty similar to the Bowfin 2 which is totally freestanding. It also has 2 doors, 2 vestibules, and a bathtub floor. - http://www.tarptent.com/double-rainbow.html

Scarp 2 can be with the optional crossing poles and is also 2 door, 2 vestibule, and bathtub floor. - https://www.tarptent.com/scarp2.html

I've been slowly looking to replace my tent and I've been leaning toward a Kelty since their customer service has had such great reviews everywhere I have seen a review. Plenty of options on freestanding tents.

Also, for something just as versatile (but lighter, thus more expensive) are the MSR tents. Many of their tents can be setup freestanding without the inner tent...just setup the footprint, the poles, and then the fly on top. Seems like an interesting idea if you don't have to worry about bugs or bad weather...
