    Some people swear by mustard, but it's really just wetness being added to make the rub stick. If you want mustard flavor, you need mustard powder. The rub will stick without the mustard.

    Just make sure the sausage hits an appropriate temp.

    Tip: leave the lid closed and resist the urge to peak.

    So I needed Maple sugar for my Black Forrest Bacon and since it wasn't readily available locally I decided to make my own. Since I had no idea what to expect I bought 32oz bottle of grade "A" (that's all they had) and set to work. Actually I had about a cup from another bottle in the fridge so that went in as well.

    Simply dump into a steep walled pot set burner to med/low, insert thermometer and wait for the maple syrup to reduce by around 1/2 and reach a temp of 152 to 157*F. You have to monitor for boil overs and periodically stir with a wooden spoon. If you leave the spooning the syrup it helps from boiler over.

    After it reaches temp either stir variously by hand with a wooden spoon until it starts to clump about 7 to 10 minutes or use a stand mixer and save your shoulders. You will need to scrape down the sides a couple times.

    Mixture will go from what looks like thin Carmel to a brown sugar consistency. Then pour in a flat tray/bowl bust up remaining clumps with a fork and let cool.

    so how long did it take on the mixer to get the brown sugar consistency?

    I normally just do ribs on my kettle and do indirect heat, so no water pan.
