@Jtcmedic is that backstrap or innerloin? Not that there is a huge difference i guess inner loin is a little more tender to me but flavor is all very close imo

They’re the tenderloin. My processor last year labeled them “catfish” which I thought was crazy. But apparently it’s a common nickname.

I never did anything with my back straps or tenderloins last year, so I defrosted them yesterday and made jerky. Just pulled it out of the oven. 4 lbs of meat filled a gallon bag of whole muscle jerky.

Jerky from tenderloins? Mine never make it into the freezer. Warm them up in a little butter or olive oil and eat them before I process the rest of the deer.

I may have froze tenderloins once...but most the time it turns into a stew, breakfast steak or philly cheesesteaks:)

The first time I've ever hunted while it was snowing in NC! No snow stuck but this guy was moving. Shot him with a 300 win mag at 240 yards. Both his G1's were broken off and he has 2 small kickers at the base.

We've pushed pause on deer hunting for the moment to get the vermin in check.

6 hogs down so far, and 3 of them were stalked and shot on foot. We had a pretty good scare with a pissed off boar the other night that ended 10 feet from the end of the barrel. I'm pretty sure that my daughter is sticking to shooting from the stand from now on.
