    Thanks Kevin. :fistbump: We've done really well, third moose for our 3 family group this year.
    About a 3 or 4 year Cow, which is exactly what we were looking for...old enough to have a decent amount of meat, but young enough to hopefully get some tender steaks and roasts. :)

    I got all bucks showing here. Axis does are scarce. Only 1 so far in freezer. And sd and her new fiancé are here with her dog. A gunshot may freak her out.

    We're guessing 150 to 200 lbs, I'll let you know when we get everything processed. We'll do the tenderloins, backstraps, rib and neck meat today; quarters will hang 'til next weekend to age.

    Nice. I’ve tried researching using fridge for aging. Garage fridge would be ideal. I have to get meat on ice pretty fast down here. May shoot the oldest axis buck since he chases away everything else. Got 3 regulars,never going to get does with all the bucks here.

    We hang the quarters in Randy's garage, he has two windows we can open and with fans pulling air through it makes a pretty decent meat fridge for the quarters.
    Another guy at work has a fridge set up with pink himalayan salt specifically for aging steaks ... I want to check out his setup sometime. he's invited us over in February for 90 day aged steaks. So far he's gone to 60 days on a batch and says they were great. I'm curious about the whole process. :cool:

    Yea tag me some pics. I’m curious also. I just bleed the meat out in ice and salt. Bucks are harder and usually just grind it. I have enough ground and looking for doe meat right now. Actually took out a 5lb brick of breakfast sausage axis and made a pot of chili and shepherds pie. Half white potato and half sweet potato .

    I hate travel days...welcome back home Chuck. :hattip:

    I've done 10+ hrs on C130 trainer out of Panama back to Pope AFB, NC 33 years ago ... overwater crew nav trainer ... more than doubled a normally 5 hour flight. Flew direct London to St Louis on a 747 once, 13 hours IIRC ... that sucked stuffed in an airline seat that long. At least on the C130 we weren't confined to a seat...spent that flight sitting around a cargo box playing cards with 3 other guys...ahh, the good old days. ;)

    That's why I like late season. At least I can hang them, 90 days not possible, but I can swing 3-4.
    I passed on shooting a couple early season deer because of the temps, and that nearly bit me in the ass later on.

    Yeah, that last cow Randy's wife got back in October was probably 7+ years old, tenderloin was too tough and we ended up grinding everything or having it made into snack sticks and hot dogs. Do you have a shepherds pie recipe? I always liked shepherds pie in England...never made it myself though. Could probably guess, but if you could point me in the right direction...
