Well. It’s taken a couple of months of reading in my spare time, but I’ve finally gotten through all 17 918 posts in is this thread. Found a few great ideas that were saved or screenshotted, and made my first order of @bvbull200 Pit Faced rub a couple of days ago. Can’t wait to get that stuff going!

I smoke on a Traeger and one if my biggest lessons learned is that Traeger pellets suck. Sadly even Amazon won’t ship me any of the good ones, so I’ll talk to a freight forwarding company and see what they can do for me.

Tomorrow I’m doing some red salmon candy style. More to come on that...

I recently did some fantasizing and just checked out all different kinds of grills. Hopefully I will be in a new home this summer and thus will need a new set up. My current setup is at the family lake house.

Traeger was one of the grills I looked at. They look very well made and engineered, but they are incredibly expensive. It looks like the only reason they cost that much is because they regulate the temperature for you, which to me... is pretty much cheating LOL.

Is it wood pellet only? How do you like yours?

OKJ smokers arent too bad, out of the cheaper ones I would buy one of those over others. The metal is thicker than most.

The price varies based on where you are. None of them are on clearance where I am.

Yes I really like my Traeger. I needed to add an insulating blanket to deal with our lower temperatures but once I did that it became great at maintaining temperature, a true ‘set it and forget it.’ The only downside about the smoker itself is that they nickel and dime you for accessories that come standard on other smokers, like a cover or a front tray or a lower shelf. I suppose that works because not everybody wants those things, but for the money you shell out for one it sure would be nice not to have to add more stuff to make it usable.

Yes it uses wood pellets only. A full hopper is good for 12+ hours of smoke at 225. Others have informed me that their brand of pellets is kind of bland, and though I haven’t tried any other brands yet, I really can’t tell much of a difference between the different woods they offer so there’s probably some truth to that.

Instead of applying mustard to my shoulder yesterday I rubbed it down with aardvark hot sauce then with spicy pit faced.

Put this "baby" brisket on a little bit ago. It's just a bit over 10 lbs and being cooked for a buddy.

I have a 21 pound turkey hitting the smoker later for a Dallas charity that provides school supplies, tutoring, and such for underprivileged kids.

I have the ok joes 4 in 1. Not the thickest guage metal, but it’s not “thin”. Mine is over 200 lbs.

Wife picked up a pack of thick cut pork chops. Put some Salt, CBP, garlic, and a little pitfaced rub on them.A2E52BD3-0498-44AB-9A0D-DDF04850E471.jpg

Out of gas, charcoal it is. Why not just smoke them a little first! Had them in the smoker with some apple for about :40 minutes, then finished over the coals.
    6AC2FE31-55CE-4F87-A7EB-B8DF847DAC26.jpg

Nice char on them. Smoke flavor was good, but light. Finished at 145 and rested for a few minutes.C9166FCF-E860-4824-85C8-6A624446894D.jpg

Paired them with some green beans and a wild rice mix that the boy loves.0F727529-9549-4AF5-B996-0B810F69F8D7.jpg

This is probably my favorite meal.
    Thanks for looking.

Thanks bud. They ended up higher than I wanted, but they were still juicy as hell and goooooood! Boy ate a whole one.

Next time in stead of one humongous old turkey get two 14lb turkeys. Younger and more tender.
