    Ha, to each their own.

    I believe you that it'll mellow but I'm pretty sure it'd still taste astringent me. The one beer in which I used half a pound took six month or so for me to finish and it never got "less astringent", did get less smokey though.

    I also think I was impressed with that first recipe before, I just couldn't remember if it was you or not.

    I'll be brewing Brulosopher's California Common tomorrow. I don't think I've ever tasted that style before, but the recipe looked tasty. If I remember, I'll post a pic.

    6 gallon batch

    7 lbs 2-Row
    1 lb C-60
    1 lb Vienna
    1 lb Cane Sugar (to achieve 1.010 FG)
    8 oz Victory
    4 oz Pale Chocolate

    Mash @ 150°F for 90 min.

    .5 oz Northern Brewer (11.0% AA) @ 60 min
    .75 oz Northern Brewer (11.0% AA) @ 15 min
    .75 oz Northern Brewer (11.0% AA) @ 1 min

    WY2124 @ 64°F
