    Yea true that . Had picked up another big one like that one and trimmed half that . This one had way morr fat .
    Need to check better next .

    Well another Black Forest Bacon is coming along. 16 days curing and today rubbed down with maple sugar and back in the fridge for to rest for about a week. Hese she is whole before sugaring

    On 1/4/18 another 10lb pork belly and 8 to 10lbs of pork jowls will be ready for pickup at the butcher.

    I think I got it figured out. Turns out my Masterbuilt is not drafty enough. I stuck a small wood chip in the bottom of the door before latching it closed and that's enough fresh air being drawn in that the a-maze-n is staying lit and smoking nicely.

    Thanks to all who gave suggestions. Tomorrow's pork shoulder is my next challenge - wish me luck!
