If you can get something in between the blank (black cover) and the lower dash panel, they just pop out.
There might be something behind them (unused harness) but you can just push that out of the way and install your new switch.
Be careful not to damage the lower dash- it is delicate plastic afterall.

Air On Board makes switches that will fit those slots and can have "Ditch lights" on them.

For the location your looking at I dont know if anyone offers one that says "Ditch Lights" Heres all of the ones CH4x4 offers http://www.ch4x4.com/product-category/push-series/toyota-small-push-switches/ You do have the option to order a custom one (first one in the list) so you could easily have it say Ditch Lights with the image of your choice.

If you have open spots to the left of the stereing wheel you can use this size switch http://www.ch4x4.com/product-category/push-series/toyota-push-switches/ I'm pretty sure theres a ditch light one somewhere in those pages or they also offer custom ones, first one listed.

Here Is that link for switches that are closest for that spot.

I just bought 2 of these for a 2012 Baja for that exact spot. I will be installing this weekend and will show some pics if You want when I'm done. But to remove you need to push out from the back. Either a long screw driver from the driver side floorboard up or remove center dash and poke them out.

Pretty well sums it up. I just did this for a switch for my bumper lights. I tried my trim tools first, but they were too thick. Ended up popping the blank out with a tiny flat head screwdriver. I read a ton of threads on this and most said it was almost impossible to remove those blanks without removing some of the trim. I had no problems at all and didn’t even leave a scratch. Take your time and it’s no problem. The air onboard switch fits perfectly. Just make sure you order the ones for under the radio not left of the steering wheel.

That link goes to the tall version for that fits the area left of the steering wheel on 2012+. Center console under the stereo are a little shorter and wider.

*Edit: link to the center options at AironBoard https://www.aironboard.com/online/toyota-replacement/tacoma-2011-2013-center.html

If you have one, a dental pick will be your best friend. Harbor Freight sells a set labeled "Feeler Gauge'. Pretty decent addition to the toolbox for a couple bucks and you don't have to explain to the wife why there's grease on the dental picks.

Yeah I know. Just quick picking links. These work with trimming. I didn't look at the other one for ditch lights.

Any difference in quality between ch4x4 and aironboard? Does one look more factory then the other?

I have a ch4x4 custom switch coming in soon. Not sure on quality against each other but the fact ch4x4 lets you customize your switches for a few dollars is totally badass.
