    You've gotta use a little flour or it ends up being really gritty. I've never used bacon grease, but it sounds like a wonderful addition.

    2 cups Corn Meal (I use yellow)
    1/2 cup self rising corn meal
    1/2 cup buttermilk
    1 large egg
    1tbsp shortening (I use crisco)
    (Optional) 1tbsp sugar

    Preheat oven to 400. Combine all ingredients, and pour into cast iron skillet that's been coated in shortening (add bacon grease here for added flavor). Bake until golden brown on the top - about 30 to 40 minutes "or until it starts smelling good" .

    There's also some products like this one but I decided not to try one. It has a hardener that you pop in the bottom of the can, and then shake up. After doing so, the can is only good for about a day.
