I'm same way. But I add a water pan still to oven. If I wrap in foil, heat is heat.

glad you didnt use the galvanized plate, some things I read it said acid in foods would take off the galvanic coating, which is no good.

See I am one who likes BBQ Sauce on my pulled pork or many of my BBQ'd meats. I always try it on it's own to make sure what I'm eating is good quality, but I think the sweetness goes well with it and tends to help cut some of the fat that is inherent in the meat.

 

Actually I dont mind a small amount of bbq sauce, but I dont want it doused with bbq sauce. Same with brisket sammich, just a little tangy bbq sauce is good.

 

No doubt I want it to enhance not completely soaked in it where that's the only thing I taste.

I consider ribs that fall off the bone to be incorrectly cooked. A little bit of pull is where its at. But BBQ is all about your taste, so if that's your jam

I feel that way about everything but ribs. I want 1/8” of delicious caramelized bbq sauce built up on my ribs. If I have time I paint them 3x in the last 45 minutes of grill time to make that happen.

I took the filet, they got the rest. That was a 20 oz steak. Plenty for the three of us.

Instant Pot, it’s quick for during the week meals. This is part of a deer ham, with potatoes and carrots. Looks a little dry but it’s not!

 

It barely made it through the rest period!
