    Fail safe is start the butts early and have them done and held in a cooler before the guest arrive. It'll take the pressure off you if they aren't done when you anticipated.

    That’s what the original plan was, but then realized that all the coolers will be utilized for drinks and whatnot. After thinking, will probably towel them and hold them in the oven with it off. Should be fine

    You should be all good, have done similar on mine multiple times. Make sure nothing is touching and give yourself a little extra time. Should be some great food.

    was gonna double smoke a ham i got on clearance recently for the super bowl tomorrow, but was walking through the kroger on a beer run and happened upon a trimmed 14 lb full packer brisket for $32... Texas folks probably don't care but anyone in GA knows that is hard to find! and usually our krogers don't have full packers ever, and when they do they are around $60-70.

    I assembled this today at work, branded Bighorn. Rural King brand, I “think”? I’m helping set up the first store in Alabama. I put together a gas grill with the same branding, and thought pretty “cheesy”. But this thing is as well built as my Brothers’ Treager. I can’t testify as to the durability or anything like that. But a decent guage steel and a seemingly a decent product. Not sure about the digital aspect of it?

    I did brisket and ribs yesterday, doing a few drumsticks and bacon wrapped onion rings today.

    Was going to do a bunch of wings, they were out of whole wings, only had them trimmed (drumette and flapper) at $3.67 per pound!!!! I’m now doing “hot legs” looks like. I’ve never tried this, going to treat them just like wings, we’ll see. They just hit some smoke.

    First cook on the kamado was a sucess. Temps were solid for the most, I had to make small adjustments every two hours or so. this was the finished product.
