    Sorry for the delay, but here are some photos of my Trager’s insulation setup.

    Here’s how it attaches on the front. As you can see, the top insulator goes around the handle. You can see the top of the lower front part, as well.

    Here’s a detail view of how the lower front part attaches.

    At the bottom of the lower front are D rings for straps that are attached to the lower part of the top insulation. Here are the straps with the lid open so that you can actually see them.

    And with the lid close it looks like this.

    From the other side, you can see that the two parts wrap all the way around with the straps holding the top and front bottom parts together, but there is no side insulation.

    I will never understand my mother’s obsession with thin cut pork chops. It must be a holdover from raising two kids by herself and living in a trailer.

    The good news, My pizza oven got here way early.

    The bad news, it's 3mm too wide to fit my pit.

    I'm not returning it. I will void the warranty tomorrow. I will notch out about 1/2" on the right side 1/4 of the way from the front to the back.

    Cut cut weld weld grind grind clean and repaint. I got high heat flat black so it will match the pit.

    You can see from the bottom that it has plenty of room to do this.

    I bought a 2” thick ribeye roast / steak. Suggestions other than cook it like a normal steak?

    Cook it as slow as you can. Offset the heat even if it takes longer. Use a drip pan under it.

    Minimal spices. Salt, pepper, garlic powder.

    Turn often. The best way for even cooking.

    Be patient. It's done when it's done.

    Post how damn it is good after you have devowered as much as you could eat.

    It’s for monitoring that turkey we’re cooking for thanksgiving. You know, so you can just relax instead of checking on it. You can hang out with your sister all day while my trusty new thermometer does the work! :D

    One trip to the hospital for food poisoning from undercooked meat costs that much, so one time of accordin good poisoning and it pays for itself.
