    Was going to smoke some chops tonight, but it decided to staring dumping snow about an hour before I was going to start. I pan fried them in cast iron instead.

    I had the grate off in the first pic and then put it on top so I could rest a chunk of pecan over the vortex. I cooked without it before and did well, I think this thing just really amps everything up temp and air flow wise. Then, you get the benefit of more indirect heat grill space for the meats.

    The ribs were good, and smelled great the whole time they were cooking. The chicken looked good, but I went home before it was served.

    Sure was some eh...interesting flame coming outta that cooker though....#nutsear

    Weather certainly was nice in SoCal though. I'd melt at 85° right now, even in that dry heat.
