    Looks good. The flavor will mellow a bit in a day or so of resting. Usually right off the smoke the taste is quite developed.

    I'd also suggest giving baking the bacon a try. Line a cookie tray with foil and lay out the slices and bake at 350/375 until desired doneness. It easier to control doneness and cleanup is even easier.

    I also have to agree with Mrs. CurtB. Chewy bacon is the better.

    How have I missed this thread??

    New to smokers but not grillin. Heck, the new smoker is still in the box and I won’t see it for another month...

    Yes, I cheated and went with a Green Mountain pellet smoker. I just don’t know if I would have the patience to regulate the temp on wood or charcoal all day...

    Looking forward to tasty food come April!

    Your not cheating just doing this a little different.

    You can buy mobile aftermarket PID controllers (BBQ Guru) for charcoal/wood burners that make it as easy as the PID controller on your GM. Set it and forget it.

    You're among friends here. Bunch of us have Pellet Poopers. Means we can drink more beer without having to worry about adding more wood to smoker lol. Less addition time = More beer time. :rofl:

    Still doing the crock thing. I made sure to bring that in the move. The smoker got shipped with the movers and is awaiting delivery once the house is finished. (Mid-late March. And I leave March 3 and won’t be home until April 4!)

    Man I know those feelings. When we moved states we had a new house built here. Took WAY longer than was planned and our stuff was in PODS Jail until the house was done. Was funny though when the house was done it was start of Feb and we had them drop the 5 pod's in our new driveway. Took a few days to get the movers to come unpack then for us (I'm getting too old to do that crap myself lol) when they brought in our bed the guy was like I hope you're not planning to sleep here tonight. I looked at him sort of odd. We have a TempurPedic mattress and he said it's a giant ice block right now. Sure enough when they had everything in place we went into the master and the mattress was like concrete just WAY colder. Luckily we weren't planning to sleep here for a few more days.

    Already had two house parties here. First was an Open house kind of thing to get to meet co workers from all divisions. Then had a Mardi Gras party. Headed to New Orleans specifically for St Paddy’s so we won’t be hosting that one... house warming in April for sure though!

    I need to start eating more healthy and seeing that pork with long beans ,it going to be one of my regular dishes . Also tried three ladies jasmin brown rice which actually pretty good. also thinking some stir fry with pitface rub also would be good . Seen lot of good stuff on here .

    Just remember bacon is pork and BLT's have vegetables. Also beer has whole grain in it so does whiskey. How much healthier could you get.
