    Just ordered a steel from Amazon. I’m gonna try to make a few pizzas on the steel with a heavy cast iron griddle above it heated to the max. Looking for a good napolitano pie.

    Thanks! Mix 1/4 cup hot water with an instant yeast packet and a scoop of sugar. After it sits for 5 minutes mix it with 2.5 cups flour and 1/3 cup oil. I let it proof for 2 hours.

    Not that hot, like 105-110 area. Teaspoon. AP works, have also used bread flour with good resilts. Plain old veggie oil but I'm sure olive would work too. Stand mixer with hook until it balls up into one unit and isn't crazy moist.
