    It's a LOT :) a CLEAN SHAVEN LOT..

    Ya when we go to them we put a hurting on the food, when we were moving from FL to MI (hopefully soon back there) my friend came down to help us. We took him to his first visit to one (Texas De Brazil) he is like me and likes to eat, when we got in the car he looked at my wife and I and said I have to unbutton my pants to sit if I don't I think I might get sick. :rofl:

    My wife being married to me and him being more like a brother than a friend and having been around him a lot bursts out laughing and says I would expect nothing less from you two. When I found out TDB was opening in Detroit I told him and he was overjoyed. We get the discount card every year and :spending:always use the whole thing. His wife is sort of a vegetarian, she loves bacon and will eat like meat spaghetti and tacos and stuff. She loves their salad bar. They jusy opened a Fogo De Chao here not too long ago so that's what we are trying on Friday.

    You'd be hard pressed to convince anyone I know in Mn. of global warming. Most say either "please" or "bring it on". Still at least two feet of snow on the ground. But 40° today second day in a row and haven't put on a jacket in 2 days now. And supposed to hit 51° on Sunday. Been almost 6 months since I have seen temps in the 50's. Not sure what to do thinking both ribs and wings right now. And sunscreen and shorts. Maybe not shorts, no one should have to look at my bright white legs. Not even me.

    I like it. Lots of meat obviously. Double check with staff but lamb chops were done by request only. They are good though! Just ask for an order to be put in. No extra cost, they just don't mass cook it. Could be the other one I'm thinking of, but I'd ask if you like them.

    This morning 12lbs of bacon finished their 40th hour of cold smoke so back into the fridge they went to start a 4 or 5 day rest before packaging. This afternoon I did pull the bacons and trimmed the rough edged to make then rectangles. The trimmings (1lb 12oz) were put in the freezer for a few hours and then ground up through a fine plate. The grindings will be used to mix in with burgers, beans and Zataran's black beans and rice. I did fry up a about a 1/4 cup into bacon bits and they are a bit harsh as expected as they just came off the smoke but in a few days they will mellow. Then all burgerphiles will be salivating at the pictures.

    @scottalot you should be fine. Worst case you could add few coals to bring the heat back up or some chunks of wood if you’ve got them

    Report back on how you like the Cowboy lump. Never used it but have thought about trying it to switch up from Kingsford briquettes.

    yeah you should be fine, you only need about 20 min or so probably on that small one to burn the bad smoke off and stabilize. If you are stabilized around 350-400 for the burgers, you'll be good to go for a while. Wood would be ideal if you do need to add some fuel so you don't get the early bad smoke from the lump, but probably no noticeable difference just grilling.

    I honestly don't like the Cowboy lump... every bag i have used sends a lot of sparks up and i get a lot of small unusable pieces in the bottom. For the last 6 months or so i have just been using the kroger brand lump, they have a regular lump and an organic and they rotate which one is on sale.

    that thing is sweet! we were at ACE hardware and my 3 year old son saw one last night. He loves helping me cook on our large bge and wanted me to buy him the mini for "his kitchen"... nah, sorry bro, not at that price. Maybe if they start making a toy one.

    Do they make a platesetter for the mini (or i think now the call it the conveggtor) for indirect heat? would be perfect for some lunch wings or smoking some thighs or something.
