    So with health on the forefront, nice weather and beef tallow just made...........it was time to make a few fries in the harrow wok. A few Yukon golds sliced up and bathed in hot tallow then dusted in Tony C's Cajun seasoning....GREAT. That lead to a couple of burgers being cooked simultaneously. After the last of the fries were done the burgers somehow slipped into the beef tallow to fry for a few minutes per side before being pooshed back up the sidewall of the wok to continue to sizzle. Healthy efff no! But neither were the beers I drank today. But the one thing the beer, burgers and fries had in common is they were damn tasty.

    If you haven't made fries in beef tallow you need to do it. Peanut oil is a second class citizen to beef tallow!

    Honestly after doing some research tallow and lard will probably become the norm here opposed to hydrogenated veggie oils.

    Very true, less processed and more unprocessed whole food. I look back at my family’s (and my wife’s) last 3 generations. Health nuts? No. Lots of real food mixed with bourbon and good times. Long livers? Yes. My narrow metric but I for one will follow suit.

    Precut and marinated tri tip goes for about $10/lb around here so when I saw this today I had to grab one. Almost bought two, probably should have.

    You ever tried them fried in duck fat? I haven't tried but a friend did some and he said they were some of the best he ever had. He had the fat from doing a few ducks on the rotisserie. I haven't done ducks in a while so I haven't been able to try it.

    One of my best score yet ! I almost had a heart attack when I saw it posted for free. I messaged the seller who wasn’t home at the time. I told her if she could message me when she got home,pull the kettle back in and I would give her $10 for the trouble. Well, it all worked out at the end. 2hrs later, she sends a message saying it was available, so i took the Tacoma and drove 20 miles each way to get it. She told me it was her dad’s who’s passed away long time ago and that her husband “doesn’t like grilling”.

    I'm not in this thread often enough to keep up so here's a synopsis:
    My next gasser will be a Weber Genisis - I'll have to rebuild everything except the fire box - it will be my last gasser
    I want an offset stick burner with at least 36" cooking deck - heavy guage
    I want a Weber 22" Bullet or similar - kicking myself for not grabbing the Trail Embers at TSC for $99 when I had the chance.
    This is the year for a brisket
    I will build a cooler stand box thing that will keep my suds frosty - It's pallets of fun!!!

    Welcome to the world of smoking. I have the same unit. That gas grill side kicks ass, heats up to over 500 in a minute or two with all three burners going. The smoker side benefits from some mods to help it run more efficiently and controlled. There are plenty of mods listed for it on the net, take a few minutes to look them up before smoking, they help so much. I sealed all the seems in the firebox with a high temp rtv, and put some nomex gaskets around the lids. I did this after my first few smokes, so I had to clean it all up before doing them. I'd suggest doing them before running the smoker. I also extended the chimney stack down to grate level with a 3" flexible drier vent. I just cut it a little long, and jammed it up in there. Last thing I need to do is seal the fire box door, to control air flow better. Runs a lot better with the mods than without. All said and done, you might have to spend $20-25 for everything.
