    All these posts of real deal no kiddin home crafted pizza has me feeling ashamed that I took the easy way out this afternoon. Raining like crazy.....couldn't fire up a grill to make a real pizza.

    I havent measured the temp but it has hot coals in it so should get smoking hot If I keep the flames going? I would think? Just an idea...may be a bust but worth a shot;)

    Thanks....gonna be mighty satisfying when I finally chomp into a slice or three.


    I gotta get a handle on how I can make various doughs. I've been buying fresh dough from the local supermarket's bakery....it's really good.....but I'd rather roll my own.

    I was thinking of my own smokers

    Wide range in their ability to do pizzas.


    In my offset.....over the firebox......I'd put a pizza stone over the upper grate......place some 1/4" spacers on it......and then place another stone on it that would actually hold the pie.

    I do things different in my other smokers. It's all dependent on the heat source and the distance from it....and most important...the air flow on said smoker/grill.

    I've been holding off on trying various dough recipes due to not having said mixer that was cited in the recipe you posted.

    I'd much rather divert the $400 and spend in on my truck.
