    Hell yes! I'm glad everything arrived safely! Looking at @WBF610 's package (giggity), you can see why a large portion of the volume of those boxes went to bubble wrap :laugh:.

    In case you're wondering the logic behind which side the logo was etched in to the Boos Block, I imagined the board often being stored upright, so the "Boos Block" would be on the bottom and unseen. When in use, the blank side of the board would be up and the "Boos Block" would then be upright and facing the guests. It made sense in my head, but now the "Boos Block" looks upside down :laugh:. Still a badass looking cutting board! I need one of those for myself, now. The one I have with our logo is getting a little warped. It was a freebie cutting board and the etching was proof of concept. It's served me well, though.

    Congrats again to the both of you on your winnings! You definitely earned it!

    Pretty good news regarding the upcoming (6 months away) Labor Day BBQ competition that we're entering. It is the 10th anniversary of the Bedford Blues & BBQ Festival and it will be Pitfaced BBQ's 5th straight year competing in it. The city has asked me and 4 other lead cooks to join a round-table to help plan this year's event. They want to make it extra special to commemorate the 10 years. First meeting is tomorrow evening.

    My first suggestion is going to be to bring back the Backyard BBQ competition. That is a Friday night event where you submit chicken and ribs. You aren't allowed to use any custom rigs, with the only exception being Ugly Drum Smokers. We want to offer our equipment, campsite, and, of course, Meat Massage up to a couple of teams that want to dip their toes in the water of competition cooking. Basically, the teams pay the entry fee, we provide the rest, and they do the cooking. It's a good way to get people involved, I think.

    Great idea. Push it as bbq smoking class for those who’ve always wanted to. Human interest story on the first night. Then get real with the big guns Saturday and Sunday and Monday.

    I started to lay the groundwork for that sort of thing last year, but the Backyard BBQ contest got nixed. We're gaining a little cred, though, so hopefully I can get it back on the agenda. Hell, we'll provide upwards of 8 drums if they want to get other teams involved.

    In case someone missed this in the other thread this is from the other day, goat ribs and pulled pork with the PF rub. Goat was a little chewy dont know why or if thats normal? flavor was great! Pulled pork is fantastic! I will be doing the PF rub again this spring summer fall;)

    yeah a neighbor gave me some ribs and a leg to try out. I think you have to cook goat a while to get it to come out tender. It was a bit chewy, they said it was a young goat so maybe they didnt let it hang in a walk-in cooler or something. Most recipes Ive seen stew the meat all day so maybe its supposed to be cooked longer. IDK still was good ;)
