    yeah I traded him in a sense, I gave him some northern pike fillets earlier in the year and he gave me some goat. So it works out. It was a little fatty, but the loin piece you could just pull off the bone and it was really good. The outside of the rib had a layer of meat and a thin layer of fat which was the chewy part of the meat, didnt have any weird flavor to note of, just could tell it wasnt beef or venison which is understandable;)

    after hunting season meat gets given away, then after stuff starts running out its like Im hoarding the wild game till we can go hunting again...;)

    about 50/50, if its deer or bear we do it ourselves. If its larger like moose or elk, we just hang it in the cooler and then take it to get processed. I didnt have my cooler up and running when my wife got her moose, so we had to take it in to get processed. But last season between us and some friends we had a couple bear, and 3 deer in the cooler. Not all at once but still has seen a lot of game in its short time of operation.

    If we get a big TW turnout, that'd be awesome! @RickS came last year, so he knows what the festival is all about. Be sure you pick him up on the way, too ;).

    Had our meeting today and the event is going to be REALLY packed this year. In addition to the People's Choice event on Saturday and the KCBS main event on Sunday, they are considering adding an IBCA event on Saturday as well (turn in ends just before People's Choice). Then, they are adding an incentive to compete in the SCA steak cook-off on Friday night. There is a real chance our little 3-man team is going to compete in 4 events over three days. Yikes! Part of the hustle, though. We only do the one festival a year at this point, so we'll take all of the exposure we can get.

    Also, I'm finalizing a deal on a run of shirts. I'll share details when that is solidified. @WBF610 and @Misplaced Nebraskan are eached owed a shirt for their contest winnings and were both on board for waiting for this new design to come out before collecting the last bit of their prize. I'll admit it is a relatively small run just to dip our toes in the merchandise waters, but I'm excited about them; hoping folks here and anywhere else we've reached are, too! If these do reasonably well, the money raised will go right back in to a second design (maybe) and another, larger run (definitely). Stay tuned.

    I was going to quote pretty much the whole conversation that followed, but THIS is the crown jewel of that discussion.

    Awesome looking food. Goat ribs sound really interesting; can't say I've ever had them. That Meat Massage is right at home on pulled pork, isn't it?!?!

    Definitely! I put a little bbq sauce on a sammich and the PF pulled pork and it was amazing! Even my friend that is really picky said it was amazing! I got notification the re-supply is at the post office, I just didnt stop in to pick it up since I have a Chiropractic appointment tomorrow, I'll pick it up then;)

    A guy that goes above and beyond to help others rub their meat, not only correctly, but with great results that lead to some of the best money shots we've seen on here... not to mention the great mouth feel, taste, and texture... the right combo of sweet and heat... teases us more and more, and yet, we sit here here unfulfilled and yearning for more, happy to await the long overdue release... of the new T-Shirt...

    First lot is 36 shirts. I ordered multiple sizes, but more of the L and XL size. I would LOVE to run out of stock quickly, then reinvest in some more, but we'll see. This will give me an idea of what sizes I should be carrying more of.

    I like what we settled on regarding the shirts, I'm just anxious to see if they turned out as nice as I hope!

    Tip: buy way more of the XL than you think you'll need... far and away the most common size out the door. Unless you're selling to Salt Bae. Even women like the XL. If the shirts are good cotton, they will shrink a bit and then they'll fit most people just right, no tight clingy, just comfy. Translation: they'll get worn way more often.
