    Conventional wisdom is to bake cookies so the smell fills the house and make people feel at home. You're in Texas, though, I think they need to smell some pecan or mesquite wood burning when they walk up :laugh:.

    Wife has one of those lamp wax melty smelly thingy do dads that smells like cookies. And I told her the same thing about BBQ! :rofl:

    Even the realtor kinda agreed. But with all the influx of Californians.... Never know :D

    I have this same probe setup, and I dont like it for the meat. Temps were constantly way off, but for grille temp it is great. How has your luck been?

    Still cooking for the 1st time with it. I'll be sure to use an analog gauge to 2x check.

    I would for sure recommend a back up gauge. Its great for grille temps Ill say, but damn it was way off for me on meat. I reset multiple times, moved probe and even got a replacement. Said F it, and just use it for grille temps.

    in a tightly sealed water/air proof tub. Ammo cans work great. They are water and air tight.

    Mine is great on temps. I left the steamer piece in and cut the entire bottom out. I put 3 bolts through the steamer piece to hold up the Terra Cotta plate as a diffuser. It holds 250F for 6 hours. After that the bottom vent clogs up. I'm just too lazy to fix that problem because cooks longer than 6 hours will go on my bigger wsm .

    Grill temp matched what the dial indicator mounted on the side showed, meat temp was about 8-10* high. Perfectly acceptable, thanks for the heads up to check it, I actually pulled it when the temp read 200*.
